HOMEMADE PEACH ICE CREAM

Since i got my Ice Cream Maker I've been obsessed with creating new Recipes.
I love this peach ice cream recipe its really tasty and summery, and extremely easy to whip up.



Ingredients:

1 1/4 Cups of whole milk.
2 1/2 Cups of Double cream.
5 Egg Yolks.
3/4 Cup plus 1 Tablespoon sugar.
1 1/2 teaspoons of vanilla extract.
1 Cup chopped fresh peaches.

Method:

Pour the cream and milk into a saucepan over a medium heat.

Add in the sugar and stir in until the sugar has melted.

In a separate bowl whisk the egg yolks until they turn a pale yellow colour.

Slowly pour in a ladle or two of the milk mixture into the egg yolks while continuously whisking to prevent the eggs from becoming scrambled.

Once you have tempered the egg yolks, add the egg mixture into the saucepan with the milk.
Turn on to medium low heat and stir continuously until the mixture thickens enough to coat the back of a spoon.
Say around 8 to 10 mins.

Stir in the vanilla extract and strain the mixture into a sieve.

Pour the ice cream mix into a bowl and refrigerate until cool.

Set up your ice cream maker and begin to churn the ice cream.

Once the ice cream starts to resemble soft serve, add the peach pieces and allow to mix for another 5 mins.

Place the mixture into a plastic container and freeze until it has hardened.
