POMEGRANATE COCONUT WATER POPSICLES

You know by now that i love a recipe with absolute minimum ingredients.
A very short ingredient list generally equals a healthier, not to mention simpler recipe.
And this recipe for my pomegranate and coconut water Popsicles are no exception, i make these every summer for the chaps and they love them, the Pomegranate can be replaced with any other fruit or even a mix of fruit, they especially love this made with strawberries.

During the summer the fussy eater in this house is 5 and always asks for Icepops to cool down.
Store bought Icepops, whilst they are ok as a rare treat, are not the best choice of a snack for kids as they are usually very high in sugar and Artificial Sweetners and Colourants.

This recipe makes enough for 6 Popsicles using a Popsicle Mould which can be purchased in any pound sop for around €1-€2.

Ingredients:

6 tbsp Pomegranate Seeds
250ML Coconut Water.
I use Vita Coco Water.

Place 1 tbsp of Pomegranate Seeds into the bottom of each Popsicle Mould and the fill to the top with Coconut water.
Place in the freezer for about an hour or until the Coconut water has started to freeze but is not completely frozen.
Using a knife stir the Coconut Water and Pomegranate seeds.
The seeds will have naturally sunk to the bottom but by stirring everything when the Coconut water has become a little more solid, you will be able to distribute them more evenly through the popsicle.
pop the lids back onto the Popsicle and freeze until completely frozen.
